Sodium metabisulfite is a white or light yellow crystalline powder with a strong smell of sulfur dioxide. Sodium metabisulfite has better reducibility, and its reduction effect is similar to sodium sulfite.
When using food grade sodium metabisulfite, the following points should be noted:
1) When metal ions are present in the food, the residual sulfite can be oxidized, and the reduced pigment can be oxidized and discolored, thereby reducing the effectiveness of the bleach. Therefore, metal chelating agents are used simultaneously in production.
2) Sodium metabisulfite solid reducing bleach, the solution is unstable and volatile, so it should be prepared for use to prevent the sulfite from unstable and volatile.
3) Sulfurous acid can not inhibit the activity of pectinase, which will damage the cohesion of pectin. In addition, after sulfurous acid penetrates into the fruit tissue, the sulfur dioxide can only be removed when the fruit breaks during processing. Therefore, fruits preserved with sulfurous acid are only suitable for making jams, dried fruits, fruit wine, preserves, etc., and cannot be used as raw materials for canning. 5) Sulfite can destroy thiamine, so it is not easy to use in fish food.
4) Due to the disappearance of sulfur dioxide, sulfite bleaching materials are easy to recolor, so usually excess sulfur dioxide remains in food, but the residual amount should not exceed the standard.
5) Sulfite reacts easily with aldehydes, ketones, proteins, etc.
Food grade sodium metabisulfite storage precautions:
Store in a cool, dry, well-ventilated warehouse. Keep away from fire and heat. Keep container tightly closed. It should be stored separately from oxidants, acids and edible chemicals, and avoid mixed storage. It should not be stored for a long time to avoid deterioration. The storage area should be equipped with suitable materials to contain the leakage. Storage and shelf life of food grade sodium metabisulfite: shading, sealed and stored.
